Guar gum is water-soluble plantmucilage obtained from the grand endosperms of cyanopsis tetragonoloba,cultivated in Pakistan as livestock feed. The water-soluble portion of theflour (85%) is called `guaran' and consists of 35% galactose, 63% mannose,probably combined in a polysaccharide 5-7% protein.
