Ginger, one of the most important and oldest of spices used in every kinds of food preparation. The rhizomes known in the trade as hand or races reach the spice trade either, with the outer cortical layers intact (Coated unscraped ginger) or with the outer coating partially or completely removed. To improve their appearance some grades of ginger are bleached by various means by liming. The turmeric (Curcuma longa) plant, a perennial herb belonging to the ginger family, is cultivated extensively in south and southeast tropical Asia. The rhizome of this plant is also referred to as the?root and is the most useful part of the plant for culinary and medicinal purposes. The most active component of turmeric is curcumin, which makes up 2 to 5% of the spice. Ginger is cultivated in India, China, Japan, Indonesia, Australia, Nigeria and West Indies islands. India is the largest producer and consumer of ginger in the world. In India ginger is produced in the states of Orissa, Kerala, Karnataka, Arunachal Pradesh, West Bengal, Sikkim and Madhya Pradesh. Kerala is the largest ginger producing state, accounting for about 33 percent of the total production in India. Out of the total production, about 30 percent is converted into dry ginger, while 50 percent is consumed as green ginger and the rest as seed materials.
